AVOCADO EGG SALAD Sandwich

This avocado egg salad sandwich is quick lunch option for the whole family to enjoy!

Pair this avocado egg salad with fresh celery, crackers, on a rice cake, whole wheat, or gluten free bread!

Ingredients:


  • 2 slices of whole wheat or gluten free bread ( toasted)
  • 2 slices of vegan pepper jack cheese or regular cheese if vegetarian
  • 1 romaine lettuce leaf
  • 1-2tsp of Dijon mustard or horseradish mustard
  • 1 slice of beefsteak tomato
  • 1/2 avocado sliced
  • sprinkle of oregano
  • pinch of salt
  • pinch of pepper


Directions:


  1. Lightly toast 2 slices of bread*
  2. Spread mustard on each side of the bread and top with cheese slices
  3. Add the avocado slices, a few on each side of the bread*
  4. Add cheese slices
  5. Add the tomato slice
  6. sprinkle with oregano, salt, and pepper
  7. Cut romaine lettuce leaf in half and lay on top.
  8. Cut in half and ENJOY!


Tips/Tricks:

If you have a toaster oven feel free to toast the cheese on top of the bread before toasting! If you are a meat eater feel free to add any slice of meat of choice. We prefer deli meats are made off 100% meat with no fillers or by products. We avoid products that use nitrates as preservatives. Brands we prefer meat eaters to buy include: Boar's Head, Stop & Shop Nature's Promise, Applegate Farms, Wilshire and Fresh Farms.
