BAKED POTATO WITH DAIRY FREE CHEESE AND BROCCOLI
For those nights you don't feel like cooking or just a perfect side for any meal!
This microwave baked potato will hit the spot!
Ingredients | Quantity |
---|---|
Potato | 1 |
Smart balance original butter | 2 tsp |
Go Veggie Cheddar or Mozzarella | 1/4c |
Dried chives | 1 tsp |
Tofuti sour cream, light sour cream, or chobani plain yogurt | 1 TBS |
McCormick Bac'n Pieces Bacon-Flavored Bits | sprinkle |
Broccoli ( fresh or frozen) | 1/2 cup |
Directions:
- Scrub the potato, and prick several time with the times of a fork. Place on a plate or in dish.
- Cook on full power in the microwave for 5 minutes. Turn over, and continue to cook for 5 more minutes. If you have the "Potato" button on your microwave, use that.
- When the potato is soft, remove from the microwave, and cut in half lengthwise. Season with salt and pepper, and mash up the inside a little using a fork.
- Top the open sides with butter and a sprinkle of the cheese.
- Steam broccoli according to package
- Add the broccoli on top of the potato
- Top with remaining cheese,
- Return to the microwave, and cook for about 30 seconds to a minute to melt the cheese.
- Add sour cream, and vegan friendly bacon bits!
- Serve and enjoy!
