Diane's Homemade Biscotti

Diane and Stevie's Grandmother love to pair these with a cup of coffee or tea at any time of the day! Diane bakes and deliver's these to her mom every few months.

Ingredients:


  •  ½ Cup  Vegetable Oil
  •  1 Cup  White Sugar
  •  3 large Eggs
  •  3 ¼ Cups  All-purpose flour (King Arthur)
  •  1 TBS  Baking Powder
  •  1 ½ tsp    Anise Oil or Substitute 1 TBS of Anise Extract for anise oil


Directions:


  1. Preheat oven to 375 degrees.
  2. Grease cookie sheets or line with parchment paper.
  3. In medium bowl, beat together the oil, eggs, sugar and anise until well blended.
  4. Combine the flour and baking powder, stir into the egg mixture to form a heavy dough.  
  5. Divide dough into two even pieces. Form each piece into a roll as long as your cookie sheet (see photo).
  6. Place roll onto the prepared cookie sheet and press down to ½ inch thickness.
  7. Bake for 25 to 30 minutes in the preheated oven until golden brown.
  8. Remove from the baking sheet to cool on a wire rack.
  9. When the cookies are cool enough to handle, slice each one crosswise into ½ inch slices.
  10. Place the slices cut side up back onto the baking sheet.
  11. Bake for an additional 6-10 minutes on each side. Slices should be lightly toasted.


Modifications: Feel free to swap anise for almond, vanilla, lemon flavor. Also, feel free to add up to a cup of sugar, also add a handful of mini chocolate chips, nuts, dried cranberried, etc.
