CHEESY BROCCOLI PASTA

This is a quick classic dish for the whole family to enjoy. This cheesy broccoli pasta can be made with any type of pasta. Pair with a fresh salad!

Ingredients Quantity
Frozen or fresh broccoli 1 package if frozen, 1 medium sized head or curd
Pasta of choice 1 package
Smart balance 1/3 cup
Garlic 1 clove minced
Go Veggie Mozzarella 1/2 cup
Salt 1/2 tsp or to taste
Pepper 1/2 tsp or to taste
Vegan Parm 1/4 cup


Directions:


  1. In a large pot, bring water to a boil. Add the pasta to the water, stir a few times to prevent the noodles from sticking together.
  2. While the pasta is cooking, steam the broccoli. If you are using frozen broccoli, steam according to package.
  3. If you are using fresh broccoli, start by cutting the broccoli in florets.. Place all in a steamer basket. Add about 1″ of water to a pot and bring it to a boil over medium heat. Once the water is boiling, place the steamer basket with broccoli inside, cover with a lid and cook for 8 minutes.
  4. After the pasta is done cooking, rinse and return to the pot. Combine steamed broccoli, butter, cheese, and garlic together while the pasta is still hot. Sprinkle with salt and pepper to taste! Serve and enjoy! 


Tips & Tricks:  We love using both fresh and frozen broccoli for this recipe. If you are short on time, steam the broccoli right in the microwave! We alternate using penne, thin, and whole wheat spaghetti when making this recipe.  Go veggie Parm, our homemade parm, or  Go Veggie Mozzarella our favorite dairy free cheese alternatives for this recipe.
