VEGAN BREAKFAST SANDWICH

Ingredients Qty
English Muffin Whole wheat or Gluten Free English muffin/bread 1
Just Egg Folded or 1/2 cup of Just egg 2
Smart balance butter 1 tsp
Go Veggie American cheese slice 1
Salt pinch
Pepper pinch
Avocado 1/2
Beyond Meat Breakfast Sausage 1

Directions: 


  1. Heat the pan you will be using for the Just eggs, spray with cooking spray.
  2. Begin by toasting the English muffin
  3. Cook the eggs depending on which product you are using. If you are using the JUST Egg Folded, heat 2 JUST Egg Folded on a skillet according to the directions on the box.
  4. If using JUST Egg, scramble in a non-stick skillet over medium heat with a bit of oil, until all the liquid is cooked through. Top with cheese during the last minute of cook time.
  5. Set the egg aside and begin preparing the beyond meat breakfast sausage.
  6. Prepare Beyond meat Plant-Based Breakfast Sausage according to package instructions. Heat over skillet 2-4 minutes on each side until carnalized.
  7. Cut the avocado in half. Use a spoon to scoop half the avocado out of the shell.
  8. Spread the dairy free butter on the English muffin, avocado, and then place egg on top.
  9. Wrap your egg sandwich and hit the road!

Stevie now makes this for Ben for breakfast every single morning before he leaves for work. Why be hangry? Prepare, and pack it to go! This egg sandwich will satisfy you until your next snack/meal.
