VEGAN GLUTEN FREE WAFFLES

These waffles are perfect for a slow moving Sunday morning.  They are soft on the inside and crispy on the outside. Pair this with dairy free whipped cream and fresh fruit!

Ingredients Quantity
Gluten Free Flour ( or all Purpose if not GF) 1 1/4 C
Baking Powder 1 1/2 tsp
Ground Flax seed ( for flax egg) 1 TBS + 3 TBS of water
Unsweetened Almond milk 1 1/4 C
Coconut oil 2 TBS melted
Vanilla Extract 2 tsp
Sugar or sugar alternative 1/3 C
Unsweetened apple sauce 1/4 C
Salt 1/2 tsp

Directions:


  1. Preheat your waffle iron
  2. Prepare flax egg. Combine 1tbs flax with 3 TBS of water. Let this sit for 5 minutes.
  3. Sift the flour into a bowl and add the baking powder, salt and sugar. Then add the flax egg,  apple sauce, almond milk or other non-dairy milk, coconut oil (melted) and vanilla, Whisk with a hand whisk to remove any lumps or use a kitchen aid mixer. The batter will be thin.
  4. When your waffle maker is ready, grease, and then pour the batter onto the waffle iron. Add enough where the whole iron will be covered once you close the lid.
  5. Allow to cook for 5-7 minutes until golden and crispy.
  6. Serve with dairy free cocowhip or non-dairy reddi-whip, smart balance original butter, fresh fruit, and maple syrup.


Tips, Tricks & Notes: We encourage you to have the whole family join you while making these! The kids absolutely LOVE these waffles. We love making these on a Sunday mornings!
