ROASTED SWEET POTATOES WITH DAIRY FREE MAPLE MAYO

Ingredients:


  • 4 medium sweet potatoes
  • 1-2TBS of olive oil or avocado oil
  • Sprinkle of salt and pepper


Ingredients for the Maple Mayo:


  • 1/2 cup of Hellmann's Vegan Mayonnaise
  • 1/2 cup of pure maple syrup
  • 2 TBS of brown sugar



Directions for the sweet potatoes:


  1. Pre-heat the oven to 400 degrees F
  2. Wash the sweet potatoes ( and peel if desired- we like to leave the skin for added nutrients)
  3. Cut the sweet potatoes into desired shape.
  4. In a large bowl coat the sweet potatoes with the oil using your hands
  5. Sprinkle with salt and pepper and run your hands through the sweet potatoes a few more times until coated
  6. Line a baking sheet with parchment paper and spray with cooking spray or lightly coat with oil
  7. Place the sweet potatoes on the parchment paper into an even single layer
  8. Bake for 30 minutes
  9. Prepare the Maple Mayo as the sweet potatoes cook in the oven


Directions for the Mayo:


  1. Mix the mayo, maple syrup, and brown sugar together using a food processor/high speed blender,
  2. Refrigerate while the sweet potatoes cook in the oven
  3. Dip the roasted sweet potatoes in 1 -2 TBS of the maple mayo!
  4. ENJOY!



Tips/tricks: Store in the fridge for about two weeks and then discard. We love using this buffalo sauce on wraps, and on tofu!
