VEGAN ZUCCHINI BREAD

Ingredients:


  • 2cups All Purpose Flour or Gluten Free Flour if applicable
  • 1/2 cup Granulated Sugar
  • 1/2 cup Brown Sugar
  • 2 tsp Baking Powder
  • 1 tsp of Baking Soda
  • 1 1/2 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • 1/2 tsp Salt
  • 1 cup Shredded Zucchini
  • 1 Ripe Banana (Mashed)
  • 1/4 cup Unsweetened Almond Milk
  • 1TBS of honey
  • 1/4 cup vegetable oil
  • 1 tsp vanilla
  • 1 Flax Egg (1 Tbsp Ground Flaxseed Meal + 3 Tbsp Hot Water)



Directions:


  1. Preheat the oven to 350°F
  2. Combine flaxseed meal and water, set aside for 5-10 minutes.
  3. Sift the flower
  4. In a medium sized bowl combine flour, sugar, brown sugar, baking powder, cinnamon, nutmeg and salt ( all dry ingredients)
  5. Mash the banana with a potato masher or fork.
  6. Shred the zucchini using a food processor attachment or a cheese grater. 
  7. Add the zucchini, mashed banana, milk, vegetable oil, vanilla and flax egg to the mixing bowl and mix until combined. The batter will be thick.
  8. Allow the batter to sit for 5-10 minutes as the zucchini releases water.
  9. Spray a 9×5 loaf pan with non-stick spray and then line it with parchment paper so that the parchment paper hangs over the sides.
  10. When the bread is done baking simply lift the sides of the parchment paper to remove the bread from the pan.
  11. Place into the oven and bake for 50 minutes or until a toothpick inserted into the center comes out clean.
  12. Cool on a wire rack


NOTES: We also love adding these Vegan Chocolate chips to this recipe!


Tips/ Tricks: Make this bread at the beginning of the week and cut a fresh slice each morning! Stevie's sister in law Hope loves this zucchini bread toasted in the toaster oven with smart balance original butter melted right on top.
