BARBECUED TEMPEH BLACK EYED PEAS
This is a delicious and nutritious vegan lunch option. Diane loves packing these black eyed peas in a thermos and taking it with her on any of her marvelous adventures. The key is to ALWAYS be prepared! You can definitely count on Diane to pull her thermos out of her purse when the hunger pains set in!
Ingredients:
- 1 medium onion, diced
- 2 garlic cloves, minced
- 1 green bell pepper, diced
- Two, 15 oz cans black-eyed peas, drained and rinsed
- 10 ounces tempeh, chopped into small cubes
- One 16-ounce jar of your favorite barbecue sauce (I prefer Bone Sucking Brand)
Directions:
- Preheat the oven to 350 degrees F.
- Cook the onion, garlic, and bell pepper over high heat until soft in a skillet ( 3-4 minutes)
- Reduce heat to medium ( feel free to add a little water to ensure they don't burn)
- Add the black-eyed peas and tempeh and stir to combine.
- Add the barbecue sauce and stir.
- Place into a baking pan, can be 9x13 or square.
- Bake for 15 minutes or until heated through and bubbling.
Serve warm on its own, over rice, or over greens. We also love pairing this with our vegan cornbread!
Diane is known for packing these with her in her thermos for an afternoon snack. These are a family favorite.
