Ingredients:
- 1 Whole Wheat or Gluten Free Tortilla
- 1/2 cup of Go Veggie Vegan Mexican Flavor Shred Cheese
- 1 tsp of Smart balance butter or dairy free butter of choice
- Pinch of salt
Toppings:
- Vegan Sour cream ( Tofutti Brand)
- Avocado slices
- Sour cream
- Shredded lettuce
Directions:
- Heat a large nonstick skillet over low-medium heat and add the butter
- Heat the tortilla slightly flipping it over every 10 seconds, until it's easily foldable.
- Add the cheese to one side of the tortilla and fold in half
- Cover and heat for about 3 minutes. Flip with spatula and cook for another three minutes.
- Press down lightly on the tops of the quesadilla with a spatula to prevent the tortillas from opening up.
- Pair this with a nice
salad and top the quesadilla with tofu sour cream, avocado slices, guacamole, and salsa!
Tips & Tricks: Feel free to add any vegetables of choice to really spice this quesadilla up! We love adding mushrooms, peppers, and onions.
