DAIRY FREE CHEESE QUESADILLA

This is a kid friendly snack that will certainly make them smile without the belly aches!

Ingredients:


  • 1 Whole Wheat or Gluten Free Tortilla
  • 1/2 cup of Go Veggie Vegan Mexican Flavor Shred Cheese
  • 1 tsp of Smart balance butter or dairy free butter of choice
  • Pinch of salt


Toppings:

  • Vegan Sour cream ( Tofutti Brand)
  • Avocado slices
  • Sour cream
  • Shredded lettuce


Directions:


  1. Heat a large nonstick skillet over low-medium heat and add the butter
  2. Heat the tortilla slightly flipping it over every 10 seconds, until it's easily foldable.
  3. Add the cheese to one side of the tortilla and fold in half
  4. Cover and heat for about 3 minutes. Flip with spatula and cook for another three minutes.
  5. Press down lightly on the tops of the quesadilla with a spatula to prevent the tortillas from opening up.
  6. Pair this with a nice salad and top the quesadilla with tofu sour cream, avocado slices, guacamole, and salsa!


Tips & Tricks:  Feel free to add any vegetables of choice to really spice this quesadilla up! We love adding mushrooms, peppers, and onions.
