DAIRY FREE CHEESY BROCCOLI RICE

This is a QUICK and EASY classic dish for the whole family to enjoy. This cheesy broccoli rice can be made with any type of rice. Pair with a fresh salad or really any main dish!

Ingredients Quantity
Frozen or fresh broccoli 1 package if frozen, 1 medium sized head if fresh or curd
Brown Rice 2 cups brown rice, dry
Smart balance 1/3 cup
Garlic 1-2 cloves minced
Go Veggie Mozzarella 1/2 cup
Go Veggie Parm 2 TBS
Salt 1/2 tsp or to taste
Pepper 1/2 tsp or to taste


Directions:


In a large pot, bring rice to a boil, cooking according to package. When boiling the rice add 1 cup of vegetable broth in with the water. Once the rice is done, combine steamed broccoli, butter, cheese, and garlic together while the rice is still hot. Sprinkle with salt and pepper to taste! Serve and enjoy! 


Tips & Tricks:  We love using both fresh and frozen broccoli for this recipe. We alternate using all different types of rice. Substitute for coconut rice or jasmine rice.  Go veggie Parm & Go Veggie Mozzarella our favorite dairy free cheese alternatives for this recipe.
