Ingredients:


1 (15-ounce) can chickpeas

1/4 cup tahini,

2 small garlic cloves, minced

1/2 teaspoon ground cumin

2 tablespoons extra-virgin olive oil, plus more for serving

2tbs of water or more as needed

1/4 cup fresh lemon juice (1 large lemon)


Directions:


  1. Rinse and drain the chickpeas
  2. In the food processor bowl combine the tahini and lemon juice. Process for 1 to 2 minutes.
  3. Scrape the bowl down and continue to process for an additional 1 to 2 minutes. 
  4. Add the olive oil, garlic, cumin, and salt. Process for 1 more minute.
  5.  Add half of the chickpeas to the food processor and process for 1 minute. Scrape sides and bottom of the bowl, then add remaining chickpeas and process until thick and smooth.
  6. If the texture is still chunky, continue to add 1tbs of water at a time until desired consistency is reached.
  7. Add salt and pepper to taste
  8. Serve with a dash of paprika and drizzle with oilve oil.
