EASY HUMMUS
Serve with raw vegetables and pretzels for a delicious snack!
Ingredients:
1 (15-ounce) can chickpeas
1/4 cup tahini,
2 small garlic cloves, minced
1/2 teaspoon ground cumin
2 tablespoons extra-virgin olive oil, plus more for serving
2tbs of water or more as needed
1/4 cup fresh lemon juice (1 large lemon)
Directions:
- Rinse and drain the chickpeas
- In the food processor bowl combine the tahini and lemon juice. Process for 1 to 2 minutes.
- Scrape the bowl down and continue to process for an additional 1 to 2 minutes.
- Add the olive oil, garlic, cumin, and salt. Process for 1 more minute.
- Add half of the chickpeas to the food processor and process for 1 minute. Scrape sides and bottom of the bowl, then add remaining chickpeas and process until thick and smooth.
- If the texture is still chunky, continue to add 1tbs of water at a time until desired consistency is reached.
- Add salt and pepper to taste
- Serve with a dash of paprika and drizzle with oilve oil.
