HEALTHIER EGG SALAD

This egg salad sandwich is quick lunch option for the whole family to enjoy!

Try it with fresh celery, crackers, on a rice cake, whole wheat, or gluten free bread!

Ingredients:


  •     2 LG Hard Boiled Eggs (made from on-hand pre-made in fridge)
  •    1  Celery rib diced
  •    1/4 tsp Celery Salt
  •    1/4 tsp Black Pepper
  •    1 heaping tsp Mayonnaise  (can be vegan/dairy free Hellman's)
  •    2 slices of Whole Wheat, Ezekiel, or Gluten Free Bread
  •    2 Lettuce leaves
  •    2  thin tomato slices
  •    1 Pickle

Directions: 


  1. Begin by toasting the bread.
  2. While the bread is toasting, remove the shell from the hardboiled eggs*.
  3. After the shell is removed, dice the eggs and celery.
  4. Place them into a small/medium sized bowl. Add mayo, celery salt, and black pepper.


*Notes: When peeling the eggs, run them under cold water while removing shell, this helps a lot!

Diane loves making this egg salad for lunch! Denise Austin, American fitness instructor, taught her to always have hard boiled eggs ready to go in the fridge.  It's easy to make bad food decisions when hunger pains begin.
