Ingredients:
- 6 Whole Wheat or Gluten Free Tortillas
- 1/2 cup of Go Veggie Vegan Mexican Flavor Shred Cheese
- 1 tsp of Smart balance butter or dairy free butter of choice
- 1/2 Low Sodium Mrs. Dash Taco packet
- 1 red or green pepper diced
- 1 onion diced
- 1 clove of garlic minced
- 2 tbsp. medium spice taco sauce
- 1 can of black beans (rinsed and drained)
- 1 package Meatless grounds or 2 15oz cans of lentils
- 1/4 cup salsa
- 1 tbsp. of olive oil or avocado oil.
- 1/4 cup of water
*Option to add Lean meat of choice ( chicken breast, 93% or higher lean ground turkey)
Toppings:
- Vegan Sour cream ( Tofutti Brand)
- Avocado slices
- Sour cream ( If you are non Vegan or dairy sensitive)
- Shredded lettuce
Directions for the Filling:
- Heat a non-stick pan with olive oil.
- Add the diced onions and minced garlic. Sauté for 5-8 minutes on low to medium heat until translucent.
- Add the diced peppers and cook until tender (about 3 to 5 minutes). Stirring occasionally. Add a splash of water to the pan if you feel they are starting to burn.
- Add the meatless crumbles, water, and the taco seasoning: in a non stick fry pan over medium heat, sauté beefless ground until browned and heated through, 4-5 mins. Add more water as needed.
- Once cooked add the 1/4 cup salsa, go veggie shredded cheese, and the black beans. Mix together.
- Turn the heat to low and cover. Cook for 5-8 minutes stirring every few minutes.
Making the Quesadilla:
- Heat a large nonstick skillet over low-medium heat and add the butter
- Heat the tortilla slightly flipping it over every 10 seconds, until it's easily foldable.
- Add 1/3 cup of the mixture to one side of the tortilla.
- Gently fold the other side over the filling and press down lightly on the top of the quesadilla.
- Cover and heat for about 3 minutes. Flip with spatula and cook for another three minutes.
- Press down lightly on the tops of the quesadilla with a spatula to prevent the tortillas from opening up.
- Pair this with a nice salad and top the quesadilla with tofu sour cream, avocado slices, guacamole, and salsa!
Tips & Tricks:
Feel free to add any vegetables of choice to really spice this quesadilla up! We love adding mushrooms, peppers, and onions.
