Red Potato & Cauliflower Mashed Potatoes
These potatoes are a perfect dish to serve at lunch or dinner! We love pairing these with vegan meatballs or our homemade turkey meatballs for the meat-eaters!
Ingredients:
- 1 cup water
- 3 large or 4 medium red potatoes, cubed
- ½ of a large cauliflower, cut into florets
- 3 cloves garlic minced
- 2 tsp Italian seasoning
- 1/8 tsp of paprika or more to taste
- 1 tsp of Better Than Bouillon
- 1 tbsp. of smart balance original or any other plant based butter.
- 1/4 cup of unsweetened almond milk
Directions:
- Wash the potatoes with a potato brush and dice into cubes
- In a medium sized sauce pan add the water, potatoes, cauliflower florets, garlic, Italian seasoning, and vegetable broth paste.
- Cover the pan and bring to a boil.
- After reaching a boil, decrease the heat to low/medium heat and cook for 20 minutes.
- The vegetables should be fork tender and soft. You will be mashing these, so make sure they are soft enough!
- Add more water as desired. We recommend adding ¼ cup at a time as needed, making sure to keep the water level at least 1-inch in depth, at all times.
- Once tender, remove from heat and add place in a food processor or a large bowl. Add vegan butter, dairy free milk, and paprika! Add more salt and pepper to taste. If necessary add more milk or paprika.
- Mash the vegetables into a chunky purée using a potato masher or a food processor.
- Serve warm and Enjoy!
