Red Potato & Cauliflower Mashed Potatoes

These potatoes are a perfect dish to serve at lunch or dinner! We love pairing these with vegan meatballs or our homemade turkey meatballs for the meat-eaters!

Ingredients:


  •   1 cup water
  • 3 large or 4 medium red potatoes, cubed
  •  ½ of a large cauliflower, cut into florets
  •  3 cloves garlic minced
  •  2 tsp Italian seasoning
  • 1/8 tsp of paprika or more to taste
  •  1 tsp of Better Than Bouillon
  •  1 tbsp. of smart balance original or any other plant based butter.
  • 1/4 cup of unsweetened almond milk




Directions:


  1. Wash the potatoes with a potato brush and dice into cubes
  2. In a medium sized sauce pan add the water, potatoes, cauliflower florets, garlic, Italian seasoning, and vegetable broth paste.
  3. Cover the pan and bring to a boil.
  4. After reaching a boil, decrease the heat to low/medium heat and cook for 20 minutes.
  5. The vegetables should be fork tender and soft. You will be mashing these, so make sure they are soft enough!
  6. Add more water as desired. We recommend adding ¼ cup at a time as needed, making sure to keep the water level at least 1-inch in depth, at all times. 
  7. Once tender, remove from heat and add place in a food processor or a large bowl. Add vegan butter, dairy free milk, and paprika! Add more salt and pepper to taste. If necessary add more milk or paprika.
  8. Mash the vegetables into a chunky purée using a potato masher or a food processor.
  9.  Serve warm and Enjoy!
