Easy Vegetable Tacos!

 It doesn't have to be Tuesday to have a TACO PARTY! 

Serve these vegan tacos a for your next meatless Monday dinner.

Ingredients Quantity
Whole wheat soft tacos or Gluten Free soft tacos 1 package
Gardein Meatless crumbles 1 package
Mrs Dash low sodium taco seasoning 1/2 a package
Go veggie Shredded cheese 1/2 C
Taco sauce 2 TBS
Zuchunni 1 small diced
Onion 1 small diced
Pepper 1 diced
Garlic 1 clove diced
Avocado Oil 2 tsp
Water 2 TBS
For serving
Shredded lettuce 1 C
Tofuti sour cream 1/4 C
Salsa 1/4 C
Avocado 1 sliced

Directions:


  1. Cook the meatless crumbles in a medium/large skillet over medium heat. Sauté beefless ground until browned and heated through, 4-5 mins. Add a splash of water if you find they are sticking to the pan.
  2. Add the low sodium taco seasoning, stir and allow to cook on low for 2-5 minutes. Add more water as necessary.
  3. Once cooked, set aside.
  4. Add olive oil or avocado oil to a medium sized pan and add the chopped onion and garlic. Sauté for 5-8 minutes until translucent on low to medium heat.
  5.  Add the diced zucchini and peppers and cook for 10 minutes until soft, stirring every few minutes to ensure they do not burn.
  6. Add 1/4 cup of water to the pan while the vegetables are cooking to help eliminate them sticking to the pan and burning.
  7. Add the meatless crumbles to the vegetables and stir. Continue sautéing for another 2-5 minutes on low/medium heat.
  8. Add 1/2 cup of vegan mozzarella and the taco sauce.
  9. Fill 1 soft taco with 1/3 cup of the mixture
  10. Organize all your toppings into separate bowls and lay out
  11. Serve and enjoy



*Notes: 
If you would like to use the whole pack of seasoning mix you can, I would just encourage you to double the meatless grounds. You can also use any toppings you would like. This recipe makes 8 soft whole wheat vegetable tacos.


Tips/tricks: This taco recipe will trick your kids! Trust me, it's been done in this household! You can also use soft taco shells instead. Get creative with toppings. You can also use plain greek yogurt as a sour cream substitute if you are vegetarian!
