ENGLISH MUFFIN PIZZAS!

STOP! Put the phone down! Do not order that pizza! These English Muffin pizzas will be one to remember!

Ingredients:


  • 6 English Muffins ( Use Gluten free if applicable)
  •  12 tsp Olive Oil
  • 12 TBS Jar Spaghetti Sauce or Homemade
  • 12 TBS Mozzarella Cheese ( Vegan Mozzarella if you are Vegan or Dairy Free! )
  •  12 TBS Can Diced Tomatoes
  •  12 TBS Oregano
  • 3 tsp Garlic Powder
  • 3 tsp  Parsley


Directions:


  1. Place a pizza stone inside oven on middle rack. Preheat the oven as high as it will go. As soon as the pizza stone heats, drop the temperature to 400 degrees. If you do not have a pizza stone feel free to use baking sheet.
  2. Place 12 English Muffin halves face up directly on top of a sheet of oven safe parchment paper.* Try to eye the size of the parchment paper to the pizza stone size or baking sheet.
  3. Spray each muffin top with olive oil.*
  4. Add a heaping tablespoon of sauce, diced tomatoes and mozzarella cheese ( vegan/gf if applicable) on top each muffin.
  5. Sprinkle ¼ tsp of oregano, garlic powder and parsley on top. Spray each muffin again with olive oil.
  6. Lift parchment paper with the muffins atop, onto the pizza stone.
  7. Cook for 15 minutes or until bubbling.


Notes:  We use the EVO spray bottle linked here. We also make our English muffins following the king Arthur recipe here. Feel free to use whole wheat, Ezekiel, or gluten free English muffins of choice. We also love using Go Veggie Mozzarella which is dairy free and makes this recipe 100% VEGAN friendly!


Behind the recipe: Diane used to make these all the time with the kids when they were younger. She was a single mom raising two kids and always found English muffins on sale. Diane always found a way to make living on a tight budget delicious! We really hope you enjoy these as much as we do.
