Ingredients:
- Marketside Kale Pecan Cranberry Chopped Salad Kit, 7 oz*
- Pinch of basil
- Pinch of oregano
- 1/3 cup of fire roasted tomatoes ( or regular)
- 1/2 c vegan go veggie mozzarella shreds
- 1 cauliflower crust
- 1/2 avocado sliced
Instructions:
- Preheat oven to 425°F (conventional oven recommended)
- Remove crust from box, overwrap, & cardboard
- Layer crust with your favorite toppings;
- Spread the crushed tomatoes over the crust
- Sprinkle with desired amount of basil and oregano
- Sprinkle with go veggie mozzarella shredded cheese
- Cook topped crust directly on the middle rack (no pan needed!) until cheese is golden brown and crust is crispy, typically 12-15 minutes
- While the pizza is cooking in the oven prepare the salad kit!
- Mix all ingredients together in a bowl ( including the dressing)
- Remove the pizza from the oven and scoop desired amount of salad on the baked cauliflower crust ( about 1/2 -3/4 cup)
Notes, Tips, & Tricks:
The serving size is 1/3 of the crust! Feel free to use any salad kit or make your own salad! We love this recipe for those nights we don't feel like cooking. So quick, healthy, and delicious!
