SCALLOPED CAULIFLOWER
This is a classic dish for serving with any meal!
It is quick and healthy, just under 15 minutes!
Switch out the potatoes for cauliflower one night to see if the family will notice!
Ingredients:
1 head Cauliflower - Cut into pieces boiled in water for 5 minutes
1/4 tsp Salt
1/4 tsp.
1/4 tsp pepper
1/4 tsp Smoked Paprika
1 1/2 Tbs Butter or margarine
1/8 Cup White flour
1 Cup Water
¼ Cup Breadcrumbs*
¼ Cup Go Veggie Shredded Cheese ( or regular cheese)
1 TBS Parsley
DIRECTIONS:
Add pre-cooked cauliflower into a casserole pan. Melt butter in pan with salt, pepper and flour stirring constantly with a wire whisk until a paste is formed ( see below picture). Add water whisking until thickened. Pour over cauliflower. Sprinkle with cheese, paprika, parsley and breadcrumbs. Bake for 30 minutes or until bubbling. 375 degrees.
Notes*: If you are Vegan make sure the breadcrumbs you use do not contain milk/whey/eggs, otherwise feel free to use any breadcrumbs you'd like!
