SPINACH AND EGG WHITE BREAKFAST WRAP

Ingredients Quantity
Whole Wheat Wrap or Gluten Free Wrap 1
Egg whites 3
Fresh or Frozen Spinach 1/2-1 cup
Go Veggie Shredded Mozzarella 1/4 cup
Salt pinch
Pepper pinch
Avocado 1/2
Salsa 1 TBS
Coconut oil 1 tsp

Directions:


  1. Lay the whole wheat wrap on a plate
  2. Heat the pan you will be using for the eggs, spray with cooking spray or coconut oil
  3. Begin by cooking the fresh or frozen spinach with 1tsp of coconut oil. Cook for 3-4 minutes on medium heat.
  4. Add a pinch of salt and pepper and set aside.
  5. Cook the egg whites, covered. Add the cooked spinach to the egg whites, this should take about 5 minutes.
  6. Toping the eggs with the go veggie cheese during the last minute of cook time.
  7. Place the cooked egg whites in the middle of the whole wheat wrap.
  8. Top with sliced avocado and salsa.
