VEGAN BAKED MAC AND CHEESE

This is a quick classic dish for the whole family to enjoy. This mac and cheese can be made with any type of pasta. Pair with a fresh salad!

Ingredients Quantity
Shells or cellentani pasta* 1 box
Smart Balance butter 1/4 cup
All purpose flour 1/4
Unsweetened almond milk 3 cups
Nutritional yeast 1/2
Garlic powder 1 TBS
Onion salt 1 tsp
paprika 1 tsp
Go veggie Mozzarella 1 C
Go veggie Cheddar 1 C
Tofuti vegan cream cheese 1/4 c
TOPPING
French fried onions 1 C
Italian Panko Vegan breadcrumbs 1/2 C
Garlic salt 1 tsp
Parsley 1 tsp


Directions:


  1. Cook the pasta -In a large pot, bring water to a boil. Add the pasta to the water, stir a few times to prevent the noodles from sticking together.  While the pasta is cooking you can begin to make the dairy free roux.
  2. To begin, melt the butter in a small saucepan over low-medium heat. Whisk in the flour.
  3. Slowly add in the almond milk, about 1 cup at a time.  Continuously whisking the entire time. Turn the heat up to medium-high and simmer until thick and bubbly, continuously whisking to eliminate lumps.
  4. Whisk in the nutritional yeast, garlic powder, onion salt,  and paprika, until combined.
  5. Stir in the vegan cream cheese.
  6. Remove from heat & set aside when desired thickness and flavor is reached.
  7. Begin to make the topping. In the food process or high speed blender ( both work) combine the breadcrumbs, garlic salt and parsley.
  8. Pour the cheese sauce into the noodles and mix until combined. Pour into an 9"×13" glass/metal pan.
  9. Sprinkle the topping evenly over the top. Cover the pan tightly with foil.
  10. Bake in the preheated oven for 15 minutes and then take the foil off.
  11. Turn the oven to broil, bake for another 5 minutes uncovered, until the topping is golden-brown. Keep an eye on it, you don't want it to burn!
