VEGAN BAKED MAC AND CHEESE
This is a quick classic dish for the whole family to enjoy. This mac and cheese can be made with any type of pasta. Pair with a fresh salad!

Shells or cellentani pasta* | 1 box |
Smart Balance butter | 1/4 cup |
All purpose flour | 1/4 |
Unsweetened almond milk | 3 cups |
Nutritional yeast | 1/2 |
Garlic powder | 1 TBS |
Onion salt | 1 tsp |
paprika | 1 tsp |
Go veggie Mozzarella | 1 C |
Go veggie Cheddar | 1 C |
Tofuti vegan cream cheese | 1/4 c |
TOPPING | |
French fried onions | 1 C |
Italian Panko Vegan breadcrumbs | 1/2 C |
Garlic salt | 1 tsp |
Parsley | 1 tsp |
Directions:
- Cook the pasta -In a large pot, bring water to a boil. Add the pasta to the water, stir a few times to prevent the noodles from sticking together. While the pasta is cooking you can begin to make the dairy free roux.
- To begin, melt the butter in a small saucepan over low-medium heat. Whisk in the flour.
- Slowly add in the almond milk, about 1 cup at a time. Continuously whisking the entire time. Turn the heat up to medium-high and simmer until thick and bubbly, continuously whisking to eliminate lumps.
- Whisk in the nutritional yeast, garlic powder, onion salt, and paprika, until combined.
- Stir in the vegan cream cheese.
- Remove from heat & set aside when desired thickness and flavor is reached.
- Begin to make the topping. In the food process or high speed blender ( both work) combine the breadcrumbs, garlic salt and parsley.
- Pour the cheese sauce into the noodles and mix until combined. Pour into an 9"×13" glass/metal pan.
- Sprinkle the topping evenly over the top. Cover the pan tightly with foil.
- Bake in the preheated oven for 15 minutes and then take the foil off.
- Turn the oven to broil, bake for another 5 minutes uncovered, until the topping is golden-brown. Keep an eye on it, you don't want it to burn!
