Ingredients:
- 2 Flax eggs (2 TBS ground flax seed + 6 TBS of warm water )
- 2-3 large ripe bananas, mashed.
- 1/2 cup of smart balance original butter or other vegan butter of choice.
- 2/3 cup brown sugar
- 1/4 cup almond milk
- 2 1/4 c of all purpose flour
- 1 teaspoon baking soda
- 1 tsp of vanilla
- 1/2 tsp salt
- 1/4 tsp nutmeg
- 1/4 tsp of cinnamon
- 3/4 c chopped walnuts or non-dairy chocolate chips
Directions:
- Preheat the oven to 350°F
- Prepare the flax egg. Combine flaxseed meal and water, set aside for 5-10 minutes.
- Sift the flower
- In a medium sized bowl combine flour, brown sugar, baking powder, cinnamon, nutmeg and salt.
- Mash the bananas with a potato masher or fork.
- Add the mashed banana, milk, vanilla, and flax egg to the mixing bowl and mix until combined.
- Spray a 9×5 loaf pan with non-stick spray and then line it with parchment paper so that the parchment paper hangs over the sides. When the bread is done baking simply lift the sides of the parchment paper to remove the bread from the pan.
- Place into the oven and bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
- Cool on a wire rack for 30 minutes prior to serving!

Tips/ Tricks: Make this bread at the beginning of the week and cut a fresh slice each morning! Stevie loves this banana bread toasted in the toaster oven with
smart balance original butter melted right on top. We also love serving this banana bread with a scoop of maple walnut ice cream or dairy free cool whip!
