VEGAN BROCCOLI CHEDDAR SOUP

We put a vegan twist on a Panera Bread staple!

This Vegan Broccoli Cheddar soup is packed with great ingredients and perfect for lunch or dinner.

Ingredients:


  • 1 tbsp olive oil
  • 1/4c minced onion or 1 medium onion chopped
  • 3 garlic cloves
  • 3  celery stalks/ribs chopped
  • 3 carrots peeled and diced
  • 1 block of silken tofu
  • 12oz bag of frozen broccoli or 2 cups of fresh broccoli chopped
  • 1/2 c of nutritional yeast
  • 1tbs of lemon juice ( about 1/2 a fresh lemon squeezed)
  • 3/4 C  go veggie cheddar cheese
  • 1 TBS Silk Heavy cream, Dairy free.
  • ¼ teaspoon nutmeg
  • 1 teaspoon salt, plus more to taste
  • Black pepper, to taste


Directions:


  1. Drain the tofu and transfer to a high speed blender/food processor along with 2 cups of water, nutritional yeast, and lemon juice. Blend on high until smooth and set aside.
  2. In a large pot over medium heat, add in 2 tablespoons of vegetable broth along with the diced onion and celery. Sauté until softened, about 3-5 minutes. Add in the garlic and cook for 2 minutes more, adding 2 more tablespoons of vegetable broth as needed to prevent burning.
  3. Add the remaining vegetable broth to the pot. Add the tofu mixture that was blended previously. Mix until uniform. Add in the broccoli, carrot, nutmeg, and heavy cream. Mix again until combined. Add in the cheddar cheese. Bring the mixture to a boil and lower to a simmer. Cook for 30 minutes minutes on low heat, stirring often, until the soup has thickened.
  4. Once the soup has thickened, remove it from the heat and season with salt and pepper to taste.
  5. If you would like to transfer the soup to a blender or food processor, feel free*
  6. Serve warm with shredded cheese or go veggie parm and fresh bread!


Notes: 

 When transferring the soup to a blender be VERY careful. We like to do 1-2 cups of the soup, still leaving some texture and chunkiness. If you prefer a smoother texter, blend all of the soup.  This soup pairs perfectly with a slice of homemade bread and go veggie cheese melted on top!
