VEGAN BUFFALO TOFU WRAP

Ingredients:


  • 1/4 c spring mix or 1 pinch with hands
  • 1/4 c cucumbers diced
  • 1/4 c of tomatoes diced
  • 1/4c of avocado diced
  • 1/4 c shredded carrots
  • 1 whole wheat wrap or gluten free wrap
  • Vegan ranch dressing
  • 1 slice of vegan cheese ( American or mozzarella)
  • 2 pieces of pre cooked Buffalo Tofu ( click for recipe)


Directions


  1. Melt the cheese over the tofu by using a toaster oven, pan, or oven*
  2. Prepare a plate with the wrap
  3. In a mixing bowl or dish, combine the spring mix, cucumbers, tomatoes, avocados, and carrots.
  4. Dice the tofu ( or keep the pieces whole)  and add to the mixture.
  5. Add 1 TBS of Vegan Ranch Dressing and lightly toss until coated
  6. Place the mixture in the middle of the wrap, do not overfill.
  7. Fold the wrap*( instructions if you need help!)  


Tips/Tricks: 

Place the tofu in the air fryer, oven, toaster oven, or frying pan to warm and crisp after they have been in the fridge. Stevie used to love buffalo chicken everything when she was younger. Over the years she has cut meat out of her diet and this has been a game changer for her! We hope you enjoy it too!
