VEGAN CORNBREAD

This cornbread is simple and quick. Enjoy warm with dairy free butter on top! YUM!

Ingredients Quantity
Flour- All purpose or gluten free 1 1/4 Cup
Yellow Cornmeal 1 Cup
Sugar 3/4 Cup
Salt 1tsp
Baking powder 1 TBS
Unsweetened vanilla almond milk 1 1/4 Cup
Canola oil 1/3 Cup
Honey 1 tsp


Directions:


  1. Preheat the oven to 400 degrees and lightly grease a 8 x 8 pan with cooking spray.
  2. In a large bowl, combine the flour, cornmeal, sugar, salt and baking powder and stir.
  3. Whisk the almond milk and canola oil and honey together. Whisk until well combined.
  4. Pour batter into greased pan.
  5. Bake for 20-25 minutes, until a toothpick inserted into the center comes out clean. 


Tips & Tricks: This recipe pairs great with our black bean chili, or our vegetable lentil soup.  Serve with original smart balance butter. This cornbread is SO delicious! The kids and the whole family enjoy this moist cornbread! Gabriella, the 6 year old in our family gets especially excited when we make this!
