VEGAN STEEL CUT OATMEAL

This make ahead oatmeal is the perfect addition to your weekly food prep line-up!

This will make 6  1/2 cup servings of oatmeal.


Ingredients:


  • 1 1/2 cups uncooked rolled or steel cut oats ( use gluten free oats if applicable)
  • 1 1/2 cups of homemade apple sauce or unsweetened applesauce
  • 1 cup of diced apples ( granny smith or honey crisp)
  • 6 TBS of walnuts
  • 6 TBS of maple syrup
  • 1 tsp Cinnamon
  • 1/2 cup unsweetened almond milk or any other plant based milk of choice


Directions:


  1. Place 6 small containers or 6 mason jars with lids on the counter.
  2. Prepare the oatmeal according to package*
  3. Once the oatmeal is cooked add the cooked oatmeal to each container—approx. ½ cup.
  4. Top each oatmeal container with 1/4 cup of applesauce
  5. Top each container with 1 TBS of walnuts, 1 TBS of maple syrup, and 1-2 TBS of dairy free milk.
  6. Top with about 2 TBS of diced apples and sprinkle with cinnamon
  7. Cover tightly and store up to 6 days in fridge
  8. When you are ready to eat, heat the containers in the microwave for two minutes stirring once. 


Notes: Using a rice cooker is a great way to make the steel cut oatmeal. Feel free to add any other toppings of  choice! We love preparing these on Sunday and keeping them as a quick and easy breakfast option. This helps us stay on track all week!
