VEGGIE BURGER
These veggie burgers are not as difficult as you may think!
Give them a try and you will see how delicious and easy these are to truly prepare.
Ingredients:
- 1/3 cup ground flax
- 1/2 cup warm water
- 1 cup cashews - ground into chunks
- 1/4 cup of macadamia nuts - ground into chunks
- 1 cup of oats
- 1/2 cup chopped parsley
- 1 1/2 shredded carrots
- 1/3 cup minced onion or chives
- 1 cup bread crumbs, *see notes for gluten free
- 1 tablespoon smoked paprika
- 1 tablespoon chili powder
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 tsp onion powder
- 2 tsp garlic powder
- 1 tbsp. nutritional yeast
- 1 15oz can of black beans rinsed and drained
- 1 15oz can of garbanzo beans rinsed and drained
Directions:
- In a small bowl, combine the ground flax and warm water. Set aside for 5 minutes. The mixture will become thick as this is the binder or egg that will hold the veggie patty in place.
- Wash and peel the carrots, and shred using the food processor attachment. (click here to watch how it's done)
- Rinse and drain the garbanzo beans and the black beans. Use a food processor to pulse the beans into a chunky texture or use a potato masher or fork to mash together.
- Place the cashews, oats, and macadamia nuts in a food processor and pulse until they are breadcrumb size ( 5 to 6 times) This should be a chunky texture as well.
- Combine the nut/oat mixture with the beans. Combine using your hands.
- Combine the breadcrumbs, parsley, paprika, chili powder, salt, pepper, onion powder, garlic powder, salt, pepper and nutritional yeast. Add to the bean/nut mixture.
- Using about 1/2 cup and shape into a patty shapes about 3/4 inch thick.
- Add 2-3 tablespoons of oil on the stove over medium heat. Add 4 patties at a time and cook until gold and crispy on one side, about 4 minutes each. Carefully flip the burgers and cook for 3-4 more minutes.
- If you would rather bake them: Preheat the oven to 375 degrees F and line a baking sheet or two with parchment paper. Place the patties on baking sheet and bake for 15 minutes. Flip and bake for 15 more minutes. Remove from oven.
10. If you would like to use a grill, we suggest letting the patties firm up in the fridge for about 15 minutes. Spray them with olive oil prior to adding to the grill and cook on each side for about 5 minutes.

- Avocado slices
- Lettuce, wrap you veggie burger in lettuce instead of using a bun.
- Honey mustard
- Ketchup
- Mustard
- Vegan Pepper Jack Slices
- Vegan Ranch Dressing
- Dairy Free/Vegan Spicy Mayo
